Savory Salmon Dishes
Salmon is one of the healthiest foods you can eat. Salmon is high in protein and healthy omega 3 fatty acids, yet low in calories and saturated fat. Salmon is firm and fatty, making it perfect for grilling, so don’t shy away if grilling fish is new to you.
There are a couple of options when it comes to marinating your salmon filet. You can keep it simple with a sprinkling of pepper, salt and garlic powder or you can utilize a wet marinade. My favorite salmon marinades include ingredients like olive oil, teriyaki sauce, fresh minced garlic, crushed ginger, soy sauce and even a little brown sugar.
To save time, you can purchase a marinade at your supermarket. Although they cost less, I suggest avoiding marinades where high fructose corn syrup is one of the leading ingredients. Honor the fish that swam thousands of miles in its lifetime with real ingredients. Not only will it taste better, it’s healthier. Cover the fish with your marinade and refrigerate for 30 minutes.
While the filets are marinating, prepare your grill for direct high heat cooking. 500 degrees is ideal and the following cooking times are based on that temperature. For added flavor, I suggest adding alder, apple or mesquite woodchips that have been pre-soaked and drained, by placing them in a smoker box or by sprinkling them onto the hot charcoals around the sides of your grill.
Once the grill has reached the desired temperature and smoking (if using woodchips), remove the salmon from the marinade and place on the grill skin side up/meat side down. Close the lid. After 2 minutes has passed, check the salmon and after the fish has noticeably cooked ¼ up from the bottom flip it over and grill for approximately 2 more minutes or close to the same time it took on the first side. Keep in mind that thicker filets like king salmon, particularly the prized and fatty Yukon River king salmon, will take a little longer and thinner filets, like sockeye salmon will take a little less time.. Don’t forget that salmon will continue to cook after you remove it from the grill.
Enjoy with side dishes like couscous and grilled green vegetables.
